Brinjals in chinese style

[h=2]Ingredients[/h]
  • 15-20 thin brinjals (eggplants)
  • Flour, to coat
  • Salt to taste
  • Oil, for frying
For the gravy:​
  • 1 tsp sugar
  • 2 tsp oil
  • 1/2 tsp salt
  • 1 tsp soya sauce
  • 1/2 tsp vinegar
  • 2 tsp cornflour mixed with 1/2 cup water
  • 1 tsp chopped fresh red chillies
  • 1 tsp chicken powder or a cube of chicken stock,crushed
  • 1 tsp ginger-garlic paste
  • A pinch of msg

  1. Cut the brinjals into thin strips,make cross incisions on the outer side.
  2. Add salt n mix well.dust the brinjal strips with flour.Deep fry till crispy n keep aside on an absorbent paper.
  3. Heat oil in a pan,add ginger-garlic paste.fry for a few seconds.Add red chillies n MSG.
  4. In the mean-time,take sugar,salt,soya sauce,vinegar,cornflour-water mixture,chicken powder in a bowl.mix well.
  5. Add this to the pan.Stir constantly till it thickens like sauce.
  6. Place the fried brinjal strips on a serving platter.Pour the sauce over it.
  7. Serve hot with fried rice
