[h=2]Ingredients[/h]
- 15-20 thin brinjals (eggplants)
- Flour, to coat
- Salt to taste
- Oil, for frying
For the gravy:
- 1 tsp sugar
- 2 tsp oil
- 1/2 tsp salt
- 1 tsp soya sauce
- 1/2 tsp vinegar
- 2 tsp cornflour mixed with 1/2 cup water
- 1 tsp chopped fresh red chillies
- 1 tsp chicken powder or a cube of chicken stock,crushed
- 1 tsp ginger-garlic paste
- A pinch of msg
- Cut the brinjals into thin strips,make cross incisions on the outer side.
- Add salt n mix well.dust the brinjal strips with flour.Deep fry till crispy n keep aside on an absorbent paper.
- Heat oil in a pan,add ginger-garlic paste.fry for a few seconds.Add red chillies n MSG.
- In the mean-time,take sugar,salt,soya sauce,vinegar,cornflour-water mixture,chicken powder in a bowl.mix well.
- Add this to the pan.Stir constantly till it thickens like sauce.
- Place the fried brinjal strips on a serving platter.Pour the sauce over it.
- Serve hot with fried rice
