Shahi Sheer Khurma

Ingredients
1 kg milk
½ cup vermicelli
1 tbsp ghee
3 green cardamoms
4 dry dates
3 tbsp sliced pistachio,
3 tbsp sliced almond
½ tsp saffron
¾ cup sugar, levelled
1 tbsp khoya

Method

Heat ghee and add cardamom. When it crackles, add vermicelli and fry till brown. Make sure the flame is not very high as the vermicelli can easily get burnt. Add milk with sliced dry dates and cook till the dates are tender. Add sugar and when the sugar dissolves add saffron, almonds and pistachio. Serve in bowls.

Rice kheer...

Ingredients :

1 pav raw rice
¼ pav sago
¾ litre milk
1½ pav sugar
a few raisins
a few cashewnuts
3 cardamom pods
1 pinch saffron

Method :

Wash rice thoroughly. Boil one litre of water in a vessel.
Drop rice into the boiling water.
When rice is half cooked, put sago (washed previously) to it.
When sago turns transparent, check whether rice is cooked properly.
(If water is insufficient, make it up by putting a little more.)
Combine cashewnut bits and sugar with cooked rice and mix constantly, till it boils well.
Boil milk in another vessel, take out its cream, and pour the milk into the cooked rice-cum-sago.
Mix saffron in a little milk and add it along with powdered cardamom and raisins.
Mix and serve.

Cholay Batooray!

Cholay:-

Cholay Boiled 250gm
(with laung 3, bari ilaich 3,(crushed), darchini 1)
onion chopped 3
ginger paste 2tsp
haldi itsp
dhania powder 1 tsp
red chillies powder 1tsp
tomatoe cubes 1/2 cup
anardana roasted 1/2 cup
zeera 2 Tbsp
green chillies, green dhania, onion chopped to garnish
oil
Boil cholay with laung 3, bari ilaich 3,(crushed), darchini 1, soda & little salt. after soaking over night.
Take 1 Tbsp oil, fry onion & ginger to soft. Add haldi, dhania powder, add waterso that it may not be burnt. Bhuno, adding water. Add tomatoe . Make it soft.add anardana & zeera ground. Add cholay little crushed. Cover lid. Add salt add green dhania, green chillies, chopped onion& tomato at serving time.

Batooray:-

Maida 500 gm
Yogurt 1/2 cup
Sugar 2 Tbsp
Salt 2 Tbsp
Ghee 4Tbsp
Soda 1/2 tsp


  • Kneed well. Put it aside for 4-5 hours.
  • Make small balls. Rool in oval shape chapatis.
  • Deep fry in hot oil.


Serve hot.
